If you have a love and genuine appreciation of whisky then this one is for you. One of Sydney’s hidden bars that seem to be popping up (or shall we say going underground) in recent months, The Baxter Inn opened its nondescript front door late 2011. Locating The Baxter Inn is half the battle: it can be found via an unmarked laneway off of Clarence Street, between two buildings, across a courtyard and down some stairs. Buried in the basement of a city building, The Baxter Inn is a dedicated whisky bar with over 300 whiskeys to choose from, set amongst the style of an old fashioned saloon bar. The atmosphere is relaxed and is a place where you can sit, talk and not have to compete over loud music. The venue attracts those aged 25+ and has a strong following with the professional crowd, with a long bar in which you can perch at (if you’re lucky) and admire the amount of spirits on offer – did we mention, over 300 whiskys! But for those who aren’t a fan of brown liquors there are beers and cocktails on offer, served by accomplished bartenders. With a small capacity of only 130 and its popularity well established, expect to line up to gain entry, and be warned lines can occur from 4.30pm with no bookings and no door list – so be prepared to wait.
